A Classic Balance...

Once fully mature, Les Coudriers grapes are hand-picked, de-stemmed, and then gently crushed. The maceration and fermentation processes lasts for 25-30 days to allow for the optimum extraction. Most of the wine is then matured in barrel, and the development of the finished wine is carefully monitored so as to achieve a subtle vanilla oak flavour which enhances the fruit without being too strident. Finally, the wine is bottled with as little fining
or filtration as possible – often this means none at all!

90% merlot, 10% cabernet sauvignon. Aged in barrel for 6 months.  Well-structured. A smooth balance of fruit and tannins with a hint of oak. Can be drunk now or kept to allow further development of the flavours.

80% merlot, 20% cabernet sauvignon. Aged in barrel for 6 months. 
Typical blackcurrant flavours produced by the higher percentage of cabernet sauvignon make this still young wine more spicy than the 2007
but still showing a good structure and balance.

~~  NO ADDED SULPHUR DIOXIDE  ~~
For this special cuve, we used a small part of our high quality 2009 harvest to make a wine without added sulphur dioxide, a preservative used in virtually all wines the world over.  This is a wine that should be drunk young, notwithstanding its full flavour and ability to develop in the glass.  Can benefit from decanting half an hour in advance to allow dissipation of the naturally occurring carbon dioxide bubbles which protect the wine from oxidation in the absence of sulphur dioxide.

A deep rose coloured wine. Delicious semi sweet, full bodied rose which was fermented in oak barrels giving an unusually complex result for a rose wine.
To be drunk chilled.

The remainder of the 2009 harvest is maturing in cask and
will be bottled in the course of the next 18 months.
